Enjoying the melt-in-your mouth goodness of our Bluefin tuna is a must. Naturally, the tuna itself is of good quality, but in order for it to have a melting texture with a clean finish, we carefully prepare and cut the fish before serving.
We prepare the fish by putting it on ice and letting it "age" for a few days so that it is at the peak of its tastiness when served.

Minoru Kida was born on October 28th, 1964 in Saitama. When he was a student, starting part-time work at the sushi restaurant that his parents went to and were familiar with gave him the chance to enter the culinary world. From then he has devoted 32 years to sushi, and his personal motto is "mindfulness, carefulness and thoughtfulness". Without lacking a single one of these, he cherishes every second spent with his customers. His skill brings the best out of each ingredient used, and is well known for work that is beautiful and pleasing both to the eyes and taste buds.
