Soy sauce making experience in Shimane



Japanese people can't live without Soy sauce, with this experience maybe you will also understand the addiction that the Japanese people have over this substance!
With this experience you will be going to Morita Shouyu which is one of the oldest and very few soy sauce maker who uses only organic ingredients. It is also one of the few soy sauce factory that uses gigantic wooden barrels to make the soy sauce!
Not only will you learn about how the soy sauce is made, you can also make your own soy sauce bottle which you take home with you!

About Soy Sauce

Soy sauce is a condiment or seasoning in many Asian cuisines. Soy sauce is made from fermented soybeans, salt, water and sometimes roasted grains.
First to make the soy sauce, the soybeans are cooked to soften the bean. Afterwards for the fermentation process they add bacterial and fungal cultures. Lastly the roasted wheat or other grains can be added into the mixture to provide a unique flavor.

About Morita Shoyu

In the Shimane Prefecture here lies a small Soy Sauce shop that sticks with its traditional method of making soy sauce, and the few places that still uses wooden barrels to make the soy sauce. They only use purely domestic ingredients and from the start to finish of the processing they do all of it in their own factory. The reason they are very particular on this way is because of their motto of "To make a safe and delicious soy sauce for their children to enjoy."

The establishment of the Morita Shoyu is said to be in 1903. However it is said that its actual establishment was before this but due to a big fire the entire town was burned down along with the original factory of the Morita Shoyu.

The Morita Shoyu takes pride and utter care for the wooden barrel, stating that the oldest barrels that is used is over 150 years old. In Japan there is only one craftsman that can make these barrels, however its a tradition that they don't want to disappear.
