Sweetfish, caught at the culinary height of its travels across the seasons, is grilled to perfection for a crispy skin and soft inside. It presents a gorgeous and colorful sight, served as if swimming up a pure, clean river. From late August, sweetfish enter into their most delicious season, carrying their roe. Please be sure to try them during this season. Until the chef's grandfather's generation, the restaurant had been located in Asakusa for 200 years. The chef now pursues next-generation hospitality even as he protects the traditions his father cultivated. He's also arranged a variety of difficult-to-acquire sake to best match the food and the preferences of his guests. Unforgettable memories of food journeys with his father
Chef Umezu says that ever since he was aware of his surroundings, he can remember his father bringing him around to try food at all types of restaurants, ranging from Japanese to Western and Chinese restaurants. These experiences, he says, were very useful to him. After graduating from culinary school, he went in search of the unforgettable flavors he experienced with his father when he was young, and honed his skills in cities like Shizuoka, Kyoto, and Osaka before entering Kaiseki ryori gyuniku shabushabu Asakusa Wakashika. With the support of his family, he works every day to offer food that reflects traditional Japanese sensibilities.
